~ I saw this recipe and thought I'd use it and make this bright and springy lemon meringue buttercream cake for Easter! It is a lemon meringue cake, filled with lemon swiss meringue buttercream and lemon curd filing, with some pieces of lemon meringues crunched up inside for some texture, then frosted in the lemon buttercream and topped with more meringues! Lots of lemony goodness!! We also had some yummy lime and strawberry jello cookies, for some color!
